Sometimes
color really can make a great difference in how a mat will serve
in a particular situation. In the food preparation industry,
mats intended for use in particularly greasy or oily areas are
often colored a rust red or brown. Those mats intended for wet
areas but with no appreciable greases might be black. Putting
the wrong mat in the wrong situation might result in workers
tracking "yucky" (that's a mat term) black "goo"
on to the dining room carpet which could mean all kinds of carpet
cleaning expenses and who knows what else.
